My new king snake seems a tad underweight. His spine is showing a little more than I would like. He has been getting a Jumbo mouse every 7-10 days.

However, my corn snake has a jumbo mouse and is alot smaller than him. Can I move him to small rats? I once read that rats are too fatty to feed as a staple diet for corns? Does same apply to kings?

if he is eating fine just keep feeding every 7 days with the jumbo mice and the weight should pick up. Small rats will also be too big you would be looking at small weeners if you want to go down that road.

My concern is that jumbos don't leave a lump in him. Would small weaners be too fatty though?

weeners would be fine for your king, but spacing of the meals would be a bit longer.
